Early Harvest
Harvested in the first days of October with the olive at a good level of ripeness and without reaching full maturity. And still the olive is green before it goes into a state of veraison (one). Its collection is done in the early morning or early morning before the sun rises. It is a selective and advanced harvesting of the fruit for the extraction of this delicious nectar of EVOO Early Harvest.
Bright green, its scent is fruity, fresh and fragrant, leaving an exquisite finish and offering a long aftertaste.

Tasting note:
It has an intense fruitiness of green olives, a pleasant aroma of fresh grass and flavor of fruits such as apple, tomato, fig, very light in its bitterness and soft in its itch. It is a balanced aromatic and harmonic oil with a fresh fruity and sweet aroma.
Its acidity is between 0.1 º and 0.2 º well below the maximum allowed by the designation of origin (0.5 º)
Premium
It is made with the olive harvested from the middle of October in Sierra Mágina when the fruit is in veraison and has not yet reached full maturity and that gives it an intense green color, as it has a higher chlorophyll content. Its scent is fruity and fresh. It leaves an exquisite finish and a long aftertaste.

1) Envero: when the olive begins to take on the black color on the outside but is not yet fully ripe.

Tasting note:
It has an intense fruity to green olives,aromatic balanced. A fresh fruit with a sweet aroma. Very light bitterness and smooth final itching. Characteristic of the picual variety.

High-end Extra Virgin Olive Oil (EVOO)
Collected in the months of November and December. The olives are picked in their optimal maturation. Being its pulp softer and with a fat yield of 20% and humidity of 60%. Making the process easier for the extraction of high-end EVOO juice and giving it a golden green color characteristic of the picual variety.

Tasting note:
It is an oil of great stability, very fruity and golden green.
Green olive and fig aroma. Light touch of freshly cut fresh grass and wildflowers. With a slight but pleasant bitterness and spiciness, With a slightly sweet aftertaste for the more mature ones. Acidity degree 0.12º / peroxide value: 5
