Not only did we discover the great diversity in taste and richness, Jorge opened a world of research to us demonstrating the beneficial properties of some of the varieties. Jorge is by nature interested in and always looking for the highest quality seasonal products. He used and nourished this curiosity for years searching for high quality seasonal products to deliver to Michelin star restaurants. While having lunch one day in Sitges, a picturesque costal town south of Barcelona, we spoke about our loved ones. A father, 90-years old diagnosed with high blood pressure, unwilling to take all the medication described because of the side effects. 

“Extra virgin olive oil! BUT IT MUST BE PICUAL!” was Jorge’s answer. 
And from that moment on he kept providing us the proof why olive oil extra virgin is called “green gold”.
