Cosecha Temprana (literally Early Harvest)
Harvested in the first days of October when the olive is ripe (green colour) but without being fully matured (dark purple colour).
The olive is even before the "Envero" phase, which is Spanish and indicates the intermediate phase in which the olive ripens from green to dark purple.
Harvesting is done in the early morning or even before the sun rises. Used is a selective and advanced harvesting of the fruit (olive) for extraction of this delicious nectar (!) of Extra Virgin Olive Oil (EVOO).
Bright green, with a fresh, fruity and intense fragrance. This nectar has an excellent aftertaste, a taste that lingers in the mouth for a lovely long time.

Tasting note
It has an intense fruitiness of green olives, a pleasant aroma of fresh grass and flavour of fruits such as apple, tomato, fig, very light in its bitterness and soft in its itch. It is a balanced aromatic and harmonic oil with a fresh fruity and sweet aroma. Its acidity is between 0.1 º and 0.2 º which is well below the maximum allowed by the designation of origin (0.5 º)

Premium
This delicious olive oil is made with the olive that is harvested in mid-October in Sierra Mágina when the olive ripens from green to dark purple. The olive is not yet fully ripe (dark purple colour). The higher chlorophyll content ensures the intense green colour.
With a bright green colour, the fragrance is fresh, fruity. This olive oil has an exquisite taste with an aftertaste that lingers in the mouth for a long time.

Tasting note
Our Premium is aromatically balanced and has an intense fruitiness of green olives.
 A fresh fruit with a sweet aroma. Very light bitterness and smooth final itching, which is so characteristic of the variety Picual.

The acidity it is between 0.1 º and 0.2 º which is well below the maximum allowed by the designation of origin (0.5 º)

High-end Extra Virgin Olive Oil (EVOO)
Harvested in the months of November and December.
The olives are optimally ripened (dark purple colour).
The flesh (the pulp) is softer with a fat yield in the olive of 20% (omega 9, 6 and 3) and a moisture in the olive of 60%. The fat and moisture content makes the extraction process of this high-end EVOO easier. The oil has a golden-green colour, so characteristic of the picual variety.

Tasting note
It is an oil of great stability, very fruity and with a golden green colour. Our EVOO has an aroma of green olives and figs with a light touch of recently cut fresh grass and wildflowers. A light but pleasant bitterness and spiciness, with a slightly sweet aftertaste characteristic for the ripened olive.
