Cosecha Temprana (literally Early Harvest)
Harvested in the first days of October when the olive is ripe (green colour) but without being fully matured (dark purple colour).
The olive is even before the "Envero" phase, which is Spanish and indicates the intermediate phase in which the olive ripens from green to dark purple.
Harvesting is done in the early morning or even before the sun rises. Used is a selective and advanced harvesting of the fruit (olive) for extraction of this delicious nectar (!) of Extra Virgin Olive Oil (EVOO).
Bright green, with a fresh, fruity and intense fragrance. This nectar has an excellent aftertaste, a taste that lingers in the mouth for a lovely long time.
Tasting note
It has an intense fruitiness of green olives, a pleasant aroma of fresh grass and flavour of fruits such as apple, tomato, fig, very light in its bitterness and soft in its itch. It is a balanced aromatic and harmonic oil with a fresh fruity and sweet aroma. Its acidity is between 0.1 º and 0.2 º which is well below the maximum allowed by the designation of origin (0.5 º)
