Where is our Extra Virgin Olive Oil Produced?

The Sierra Mágina Natural Park is a protected natural area, at an altitude of 2,167 meters, in the south of the province of Jaén (Spain).
It was declared a natural park in 1989 and is situated around the steep Sierra Mágina massif. It is one of the most attractive mountain areas in the province of Jaén. With its great natural wealth, diversity and cultural values, Sierra Mágina is exceptional within the special range of protected areas in Andalusia.
<< Sierra Mágina >> is a geographical indication with a Protected Designations of Origin (P.D.O.) for Extra Virgin Olive Oil (EVOO).
The producer who has a P.D.O. agrees to follow defined standards to maintain quality at a high level. 
In addition, there must be a government agency that regulates and monitors compliance with these regulations. In the case of Spanish P.D.O.s, they are protected by European regulations. 
For the << Sierra Mágina >> designation of origin only the following olive varieties are used: 
Picual and Manzanillo de Jaén. The predominant of these varieties is the Picual variety.

Properties of the Picual variety

The Picual variety has a high content of polyphenols or antioxidants making it highly stable. This means that there are no chemical changes in our body. By having 80% monounsaturated oleic acid, which our body synthesizes and is highly recommended by doctors to reduce bad cholesterol (LDL) and increase levels of good cholesterol (HDL), plus the prevention of cardiovascular diseases.
How do we make our Extra Virgin Olive Oil (EVOO)?

We grind in less than 24H from the olive harvest, with a cold extraction process, and the most advanced technology, along with professionalism and a lot of wisdom passed down from generation to generation since the Middle Ages.

This nectar of the gods was already highly valued in Roman times, for amongst other qualities, its healing properties.
Cosecha Temprana
To produce 1 liter approx. 11 Kg olives is needed
Harvested in the first days of October when the olive is ripe (green colour) but without being fully matured (dark purple colour).
The olive is even before the "Envero" phase, which is Spanish and indicates the intermediate phase in which the olive ripens from green to dark purple.

Premium
To produce 1 liter 7 to 8  Kg olives is needed
This delicious olive oil is made with the olive that is harvested in mid-October in Sierra Mágina when the olive ripens from green to dark purple. The olive is not yet fully ripe (dark purple colour). The higher chlorophyll content ensures the intense green colour.
High-End Extra Virgin Olive Oil
To produce 1 liter 4 to 5 Kg is needed
Harvested in the months of November and December.
The olives are optimally ripened (dark purple colour).
